Mix flours, sugar, salt, vegetable oil, cinnamon, nutmeg, yeast and water in a stand mixer. Knead for 10 minutes, then cover and let rise for an hour. Turn dough onto a large cutting board or other clean surface. Cut into 8 equal sized balls. And shape into a long snake. (if using a filling, first press into a rectangle and add a line of fillings in the middle, then pinch the sides around the fillings to make a tube.) Wrap the snake around your hand and pinch it closed into an O shape. Cover bagels and let proof for another 20 minutes. Toward the end of the proof time, bring a large pot of water to a boil and preheat oven to 425°F. Get out a cookie sheet lined with a silicone baking mat, or generously greased with cooking spray. When proofing is done, boil your bagels 2 or 3 at a time, depending on what fits in your pot, for 2 minutes (1 minute per side). When done boiling, put the bagels on the cookie tray. You'll have to do this in a few batches, but that is okay. If desired, sprinkle the hot, wet bagels with toppings like cheese or cinnamon sugar or poppy seeds, depending on what you like. Bake at 425°F for 20 minutes. Makes 8 delicious, hot bagels! Our all time favorite is chocolate chip.
