    Notes

In a frying pan with a glass lid, put ¼ inch of water, a healthy sprinkle of salt, and a small splash of cider vinegar (about a tablespoon). Put on the lid and bring it to a boil

Crack as many eggs as you want for the meal into a separate bowl.

As the family sits down for prayer and when everything else you’re serving is basically done, put the eggs into the pan. Immediately put on the lid. Leave the heat on quite high. Wait until the bubbles stack up against the lid—that usually takes a minute or two—and then turn off the heat. Set a timer for 4 minutes for medium, 5 minutes for medium-firm egg yolks. DO NOT remove the lid! When the timer goes off, carefully drain off some of the water to make serving easier, and then serve the eggs with an extra pinch of salt.
